Argentine Style Skirt Steak with Roasted Potatoes and Caramelized Red Onions
This yummy dish not only tastes delectable, but it's really easy to whip up at home. Serves 4.
Ingredients:
Directions:
Marinate the skirt steak in olive oil with salt and pepper for about an hour. Dress the diced potatoes in olive oil, salt and pepper and roast them in the oven at 350º (for about 10-15 minutes); until they are nice and soft. Slice the red onions thin and cook them over medium heat with sugar and salt, until the sugar caramelizes the onions, about 5 minutes. When the onions are soft and a bit brown, add the red wine vinegar and let them cool down.
To finish, heat a pan to high heat and add the marinated skirt steak until it's cooked to your preference. Next, add the potatoes and onions to the pan with a little bit of butter. Season well. To plate, place the potatoes and onions on a plate; slice the steak, and place on top of the vegetables. Serves 4.

APRICOTTI MARTINI
Serves one in a martini glass.
Ingredients:
2½ oz. Vodka (we use Rain)
2 oz. Apricot juice or puree
3-4 Fresh mint leaves
Simple syrup (equal parts of water and sugar, warmed and then chilled)
Directions:
First, muddle or crush the mint leaves in a tall pint glass. Next, add a good amount of ice, enough to cover the top. Pour the vodka, apricot juice and simple syrup into the glass. Cover the glass and shake it until all the ingredients are distributed. Strain and pour into a martini glass or a regular glass. Garnish with either a mint leaf or a dried apricot. Enjoy!
